5 EASY VEGAN BREAKFAST IDEAS

August 14, 2020 by Little Miss Honey

pancake

I am hardly a breakfast person. I rarely eat eat breakfast ever since 3rd year high school when we move to Saudi Arabia. We go to school way too early and I didn’t feel like eating breakfast at all. Plus, I never liked breakfast ever since I was young. I never seem to be hungry in the morning.

However, after we have moved here in Oman, I would have work hours that start at 2 PM and a good amount of off days. So more slow morning with my family. My kids enjoys breakfast mornings. They are happy if they know my work schedule the next day is starting on the afternoon and not in early morning. I love spending relaxing mornings with my boys and fixing them breakfast. My boys’ favorite breakfasts are often my classic quick-cook oatmeal or my egg bread as Naj would call it. Before, I would just have my large glass of lemon water in the morning or my occasional coffee. But somehow, breakfast is beginning to became my favorite meal nowadays. I enjoy these easy, vegan breakfasts. I make these for the kids and they love it!

Here are 5 easy, vegan breakfasts with recipe for you to try:

  1. GOOD OL’ CLASSIC OATMEAL
pancake

Ingredients:

1/2 cup quick cook oatmeal

1 cup water

1/2 ripe banana

1 tsp chia seeds

1 tablespoon peanut butter

Direction:

Pour hot water in oatmeal in a bowl and mix. You can also microwave it the room temperature water and oatmeal for 2-3 minutes then mix. Top it with sliced banana and chia seeds. Drizzle it with peanut butter.

Tips:

  1. If you want even a healthier version, use steel cut oats, whole grain oats or rolled oats and cook in stove.
  2. You can also mash the banana and mix it in to the oats. It will make sweeter taste.
  3. If you want to sweeten it even more, add a tbsp of sugar / stevia / maple syrup.
  4. If you find the mixture to be too thick or dry, add a dash of plant milk. My favorite is Alpro Oat Milk or Alpro Rice Milk
  5. You can also get creative and put different types of fruits, seeds and nut butter. One time I made the Good Ol’ Oatmeal and added pomegranate on top.
  6. You can also add a drop of vanilla extract and 1/4 tsp of cinnamon powder.

2. Simple Vegan Pancakes

7 VEGETARIAN PASTA DISHES THAT WILL MAKE YOUR MOUTH WATER

July 3, 2017 by Little Miss Honey 835 Comments

Pasta is easily one of the most versatile dishes available, which means there are plenty of ways to include it even in a vegetarian diet. In fact, the sheer number of choices you have with pasta makes it the perfect option for those still new to the vegetarian lifestyle. Of course, that doesn’t mean long-time vegetarians won’t be able to enjoy these pasta recipes. If you’re looking for good additions to your vegetarian menu (or if you’re simply looking for nutritious and tasty dishes), then you’re in the right place. We’ve come up with a list of healthy vegetarian pasta dishes that are so good that even meat eaters would love them.

1. Pasta with Stir-fried Cherry Tomatoes

Perfect for those who don’t mind a bit of dairy in their vegetarian dishes, this recipe is easy to prepare but just as easy to enjoy. Being stir-fried provides a healthier and more affordable alternative to factory-made tomato sauce, which contains additives, while the grated cheese adds a creamy texture to the pasta. This recipe tastes great on its own, but it’s best served with vegetable salads.

2. Lemon Pine Nut Pasta with Broccoli

Cheese and veggies once again make magic with this awesome combination of parmesan broccoli, lemon, and pine nuts. The tart from freshly-grated parmesan cheese complements the zest of the lemon juice, while broccoli and pine nuts add volume and extra texture to this lovely vegetarian treat.

3. Zucchini Spaghetti

This vegetarian pasta recipe is a prime example of beauty in contrast. The crispy texture of fried zucchini goes well with the creamy texture provided by the shredded parmesan cheese. A few dashes of olive oil and the addition of basil leaves gives this surprisingly filling dish a tangy flavor that vegetarians will love.

4. Squash Linguine with Sage

Strict vegetarian and vegan diets that avoid even dairy products often have to deal with a lack of options to make their pasta rich and creamy. This recipe aims to address that problem by replacing the cheese with butternut or kabocha squash to create the creamy texture, and the fried sage is accompanied with pepper flakes to give the dish a rich, spicy flavor.

5. Spaghetti with Lentil and Mushroom Meatballs

You can’t talk about spaghetti without mentioning meatballs, but what if you’re going for a vegetarian dish? Meat may be out of the question, but lentils and sliced mushrooms should work as excellent alternatives. The best part about this recipe? It can be served with your choice of sauce or pesto.

6. Pasta with Spinach and Ricotta

A true testament to pasta’s versatility, this easy-to-make dish is already good on its own. What makes this dish even better is that you can personalize it by adding other vegetables to tailor its taste to your own preference. You can even isolate a portion and add meat to it if you want to share it with someone who still prefers some pork or beef in their dish.

7. Pesto Pasta with Avocado

Avocado has become a trendy food item lately, so why not try to keep up with this healthy pasta recipe? Avocado is rich in omega-3 and omega-6, which is good for the heart and has the distinct, creamy texture that works well as an alternative to dairy-based cream or cheese. The mild avocado flavor also goes well with the rich flavor of pesto.

There are many people who often associate the term “vegetarian” with “bland” or “boring”. However, these vegetarian pasta dishes are rich and flavorful enough to convince these people otherwise. Feel free to try out these recipes the next time you have a craving for plant-based pasta dishes!

THINGS THAT INSPIRED ME THIS WEEK

January 25, 2015 by Little Miss Honey 1,944 Comments

This week started with my husband’s birthday. I took a vacation leave for his birthday. Unfortunately, his workmate was called for national service so his leave was postponed making him wok on his birthday. (insert: sad face) But we managed to have a little celebratory birthday gift unwrapping on the eve of his birthday. We were on the floor with gift-wrappers, cupcakes, our camera phones and our baby at 1AM in the morning. Yes, we kept our baby up at 2AM in the morning. He is and should be part of our little celebration. (Don’t judge.)

I used the calendar given by Bloesem gave on their workshop last Saturday as a birthday card. I gave my hubby two birthday gifts this year. I am so excited when he is unwrapping his gifts. I understand now why people loves giving gifts. The mere joy seeing your loved-ones so happy is so worth it.

bday

We didn’t get to celebrate outside or have a birthday dinner this year. My husband wanted it that way. He wanted to be practical. He said, ‘The best gifts he have is me and Naj and that is enough’. He added, ‘The most important thing is we are together. Material things may get broken but we are forever’.

Another  thing that also got me inspired this week is that my hubby and I talked about our plans. Our future plans. Or back-ups plans. As you all know, I love planning. I feel better if I can visualise the road ahead of me. I am excited about our plans. I am happy about our plans.

Another great thing about this week is that my sister is back and staying for a bit of time here. Yey! It is always fun if my sister comes to visit. And my son is one happy nephew too.
